>Chunky Minestrone and Vegetable Omelete with Tofu
>I went out for a walk to Choitrams this morning and I swear, it was 15degrees! I was shivering! I had to go get some ingredients for the start of our Christmas feastings! I’m making Melting Moments for my husband’s workplace just to bring some festive cheer to a stressful environment! I needed to get some butter, and got some parsnip, kumara and a bagful of fresh cranberries. These are for our Christmas lunch! Can’t wait!
Anyway, we had chunky minestrone for our Sunday and Monday night dinners. The meal was very chunky, thanks to the added barley. The ingredients of this minestrone are:
500g beef, sliced
1 broccoli head, bite size
10 fresh mushrooms, sliced
2 carrots, diced
1 clove of garlic
4 small onions
1 can fresh organic tomato puree
2 cups barley, cooked
1 cup honey roasted peanuts, crushed
2-3 cups of water
oregano, salt and pepper to taste
Put in the tomato puree and water, add in the carrots, broccoli and simmer. When softish, add in the remaining ingredients and bring to a boil till all the vegetables are cook. Add in oregano, salt and pepper to taste as you go. Finally when the soup is ready, top the soup with the beef stirfry. Don’t mix it in too well as we want the beef to maintain it’s crunchiness.
In addition to last night’s dinner, as there wasn’t enough left overs for two, I made an omelete purely of frozen mixed vegetables, salt and pepper. To top it off, I panfried tofu slices and squirted tomato sauce over the dish. Also, if you don’t like tomato sauce, you could season it with soy sauce instead for an Asian finish.
Just made some Melting Moments, will blog about it tomorrow when it’s iced and sandwiched together. Found a healthy version of Christmas Cake online, looks good and would definitely be guilt free when eating. So our cake will be semi healthy as I want to feel semi guilt free when eating it as Christmas Cake is my favourite cake to have during Christmas!! It’s a MUST!!! 3 days till Christmas… WOO HOO…
